Other: Novice looking to start to build canoe

Hi all! I am an English Volunteer up in Fort McPherson, Northwest Territories of Canada. Made Kayaks, Dinghies, and Canoes 30 years ago at school.
Working with Tetlit Gwich'in 'aborginal people' and trying to pass on some crafts in the work shop. Looking to build canoes mainly and await a couple of books which are on order. (Mail deliveries are pretty bad up here).

Can any one give me some advice on where to start? My High School Students are capable and some will leave High School to go and live out on the land. So I would prefer to cultivate life skills which are applicable to them.

Any help?
