i've not made a stitcher, and aside from mechanical bond issues, the very very 1st thing i'd do is seal coat the outside and inside(for the rowboat only as you can see it) of the ply.
then all your dirty hands marks, spills, glue overruns, grease and other stain possibilities will be hugely, hugely minimized. you are going to epoxy these areas sometime, so there is no weight penalty by doing it early.
like even for these first scarfs or butts, if you get glue overrun on bare wood, when you do the final glassing or first seal coat, these areas have a greater likelihood of showing up as a separate reflecting surface as well as possible slight color and character changes.
