I haven't built anything S/G but a good book or 2 is always a good start. Try 'The New Kayak Shop' by Chris Kulczycki, I believe it is a good resource for S/G. Unthickened epoxy will make a strong glue joint if it doesn't all run out of the joint. Usual practise is to wet both sides to be joined with unthickened epoxy (raw wood will wick in lot of epoxy) and then use thickened epoxy to glue the joint. If the joint is tight you should be ok, there's a lot of surface area in those scarfs. If the scarfs come apart you can clean them up and glue again with epoxy thickened with silica.
