I don't think you'll have quite enough volume--especially leg room plus room for gear. You're probably OK if you have 275 lbs, and primarily a daytrip boat.

You might consider stretching the Guillemot 'L'. You probably want closer to 23" or 24" width for adequate volume/displacement, plus a double is very disconcerting when your partner moves. If you're skilled paddlers, then leave the boat at 21", and add some more length.
