David, I don't know the width or number of panels but in my short experience with a few 4,8 panel hulls if the 4 panel ones have an expanse of unglassed area on the inside it's easy for it to flex more in the center than right at the chine/keel where the 9oz tape is. So the hull may well be plenty strong but the difference in rigidity between the center and edge of the 9oz tape is big enough for little openings in the epoxy to allow water to seep in. Honestly for most paddling that's not a problem but without knowing your size it's hard to generalize. Little things like sitting in the hull on soft grass is enough for a wide bottom hard chine unglassed cockpit to start having little cracks.
No knowing how narrow the panels are on the Guillemot I can't say if tape alone is ok. I would take Nicks recommendation for what is needed.
