You got me thinking....in Hospitals, a doctor will often "pre-treat" a patient with a antihistamine if a drug to be given 1/2 hr later or so is likely to cause an "allergic" reaction. An example of an over-the-counter anti-histamine is benadryl (diphenhydramine). MDs may also use a corticosteriod, like prednisolone, etc (cortisone type drugs), but you need a prescription for those.

So the question...do any of the epoxy users also take an anti-histamine (Claritin, Allegra, Benadryl, etc.) for seasonal allergies? Do you still develop symptoms from exposure to uncured epoxy?

This isn't a recommendation for anti-histamines. Even a non-presciption 25mg diphenhydramine can make some people very drowsy (it is often a component of non-Rx sleeping pills). However, some of the presciption anti-histamines are "less sedating" and may help with some of the mild symptoms if taken BEFORE the planned exposure to the epoxy. Might be worth asking your doctor about this prophylaxis. If you have difficulty with breathing when exposed to the epoxy, forget anything I wrote and try a new non-epoxy hobby.
