I do not have a 100.5 and I lent my book out, so I don't know what it is. What I used to fair the inside curves was a gutter plane, wooden. It worked well, but I also used a tiny finger plane which also worked well, since it is narrow enough that you only plane the corners off one half strip at a time. I rounded the corners of the iron to avoid gouging. The bulk was done with the ROS tho.
With all the stuff you are planning, did you ever consider a user grade stanley 45? It will do almost all of it.
I make my panel frames by resawing 3/4 stock in half, and edge gluing them for the floating panels. I don't do the raised panel like you are suggesting. I do my cross grain work with a 289 and a 46, usually only the edges of tops in a "thumbnail" edge. - Scott
