E-Glass. There are lots of different options but you'll get a very strong boat with a typical 6-9 oz on the hull (inside and out) and 3-6 oz on the deck (inside and out). I ordered mine from Raka. Be sure to ask for it rolled, not folded.

I made a to-scale pencil sketch to determine the footage I needed. You can gain a small amount by laying the fabric down on the diagonal (as described in Nick's book). Multiple layers are fine. Any combination of weights is fine. I'm experimenting with satin weave this time.
