Hi Ian, I have done it that way for building two of Nick's boats. The first build I used a 1/4" wide feature strip of aspen for the exposed side. It workded very well as it is a harder wood and I didn't get any banged up edges on the cove even with lots of handling. On the 2nd project I used western red cedar, and it did get banged up a little, but I don't think anyone could tell by the finished product.

I will continue to use this technique.

I also posted the question a while back to see what others were doing and the response was that some plans suggest to do it that way.

Nick has very good reasons for beveling the edges, but it isn't really required.
