I have been looking into mounting a sail on my Kayak and came across a couple of interesting sites. The one below has some interesting Proa designs using air foils for stability. From what I can tell by adjusting the angle of the foil you can keep a narrow surf ski stabel with a sail. The bulb above the water provides stability while you get up to speed.
