I finished glassing the hull last night; 9.75oz on the bottom football and 6.5oz on the sides. I ended up throwing a very thin skim coat on - mostly to prevent the sandpaper from digging into the glass during varnish prep. I brushed it out and then squeegeed almost all of it back off... checked this morning, no sags/runs. Thanks for the input everyone.
