I too was at that point on my Night Herron a couple of weeks ago. I can't tell you what to do, but only tell you what I did. I did not use bead and cove strips.
First I used a strip that was slightly less than 1/2 wide. At the bow I planed it with as much a bevel as possible for the strip. I then continued the bevel as it moved down the boat. I also tried to bend this as I went using a heat gun. That helped some.
Finally, at others suggestion I used hot melt glue to hold this in place.
What was the result was less than perfect at first, but as I have progressed up the deck the first strip hold better, but not perfect. After several strips, I then pressed the deck down to the hull will inserting a pull saw to try to create a better joint. That was the most successful way to join the deck.
When my deck is finished I intend to plane/sand until I can get as close a fit as possible.
