Andy,
I've been thinking about the same thing but I'm not sure I'd have the guts. See Eric's link below...this courageous individual cut up his stitch and glue boat with great success.
The website also includes a reference to the SeaKayaker article that addresses exactly this procedure. I had the article sent to me (Back-issue order only) and it's quite comprehensive. My boats aren't finished yet but I'm still considering it.
In light of current air travel rules and conditions, I wonder if it's worth the hassle of bringing one along if you can rent near the put-in. It would be great to hear from someone on this board who's tried this...
