I epoxied the interior of a kayak in a slap dash manner in 48 degrees,,somehow thought the laws of physics would be kind to me because I've done the same thing in warmer temperatures...wouldn't do it again. Waste of epoxy and nearly impossible to do a neat job especially if this is a first time experience. A 100ft roll of 6mm x 10ft plastic costs about $28 from Home Depot. Waiting for warm days (50degrees?), a plastic warm screened area, a multitude of cheap lamps or the heater Rob mentioned is worth the preparation. 20 degrees can make a big difference.
