I have just finished stripping a kayak and found out there is a lot of scraping and sanding involved to remove glue and fair the surfaces. This resulted in removing a lot of the wood on each surface. I cut my strips from clear Western Red cedar planks that were 3/4” thick. I used a table saw and the strips turned out well. I didn’t use cove and bead. You want the edges of the strips that join to be very smooth; therefore you will have to plane the planks to the dimension of the strip width (3/4” wide strips are the most popular) before cutting them into strips. If you plan on making cove and bead strips, you could possibly leave the planks rough sawn and trim the strips to your desired width with the cove and bead process. I suggest you cut some trial planks, then cut some strips from them before you decide what to do.
