David,
I think the S&G Guillemot is my favorite kayak. Myrl is doing a fantastic job on his. I would think about installing lightweight permenant deckbeams to support the fabric skin, and leave them in when you strip it later. If you want to start stripping now, build another S&G hull to strip the deck on. This way you still have a boat to paddle and one to work on. Just an idea.
