Matthew, I would not suggest it. I tried that, of course my boat has a more tortured build-up, and while moving the panels around they cracked at the joints. That was with an 8" square sheet on one side.
When redoing the joints I put two layers of 6oz. ( one 3oz. and the second 6oz. ) on both inside and out and feathered them out at the edges and it's very strong and I defy you to tell me where the glass edges are or to see a lump in the sides where they are. When wet out the outer 3.25oz glass layed down very smooth and it all came out very even. It just takes a bit more work, but it's worth it. I feel very comfortable with 30 oz. of glass cloth at all the seams in this canoe and it looks very good "bright." I did add another 6oz. at the stems and it finally started to show, but that doesn't bother me a bit. Most people that have looked at it didn't even notice, or when I pointed it out, thought I was being way too worried about it for nothing. I'd go for the extra protection and not skimp at the seams.
