S&G: Excess epoxy waste

I have started on a Coho (last night) and butted the first couple of seams together. I mixed 1.5 ounces of epoxy for the task, and quickly found out that I had 1 ounce more then I needed to do the first two panels. Can I brush my extra epoxy (not now - it's kind of hard) on the inside of the panels as I go? what type of problems will this cause down the road? It seems like a waste and maybe the answer is more conservative batch sizes or have more pieces ready to go, but if it won't hurt anything, I would like the option of not tossing it in the trash.
