The doubles cockpit is HUGE, so if your scaling it down, use the offsets from the single. I would also suggest doing a cockpit recess. In Nick's book, he said it really wasn't necessary, but the deck is pretty high on the double and dropping it down it bit would be nice.

Also think about what other kayaks you may build or paddle and if they spray skirt is likely to fit.

After buying two spray skirts for the volumous cockpit of the double, I am unable to use them on my single....way too big.

Maybe use the offsets for the double cockpit as a recess cutout, then strip and put a smaller cockpit opening in.
