A simple and not very expensove experiment: For about $16 buy two sheets of lauan. That should give you enough material to work with for some scarfs and cutting most, if not all, of the hull panels. Try stitching them together. if the wood bends properly and can be drawn into shape properly then you'll have most of your hull done. At that point just fill in the fillets, and continue in your building. Buy however much plywood you'll need for the deck.
If the wood falls apart, won't bend, or in some other way the project blows up in your face, figure you are out jsut $16 of plywood -- some of which can be used for other projects, and maybe 2 ounces of epoxy used in the scarfs.
My bet is that you'll get the hull built without a hitch and then go on to do a deck of lauan, too.
