With a stripper, the boat is built on frames attached to a strongback (internal or external). All the action takes palce around that, so it makes the most sense to keep your tools around there. The strongback is supported above the floor by braces or sawhorses or, in my case, benches from a picnic table. A 2x10 or 2x12 plank set alongside the strongback, and resting on the same supports should provide all the "table" space you need. If you are working with strips, they are long and thin. Your workarea should reflect this.
With a stitch and glue boat there is no strongback, but a long, lat workarea is desireable. YOu may need to support plywood panels that are over 16 feet long, and rather narrow while they are being cut. As the boat is assembled you'll need a convenient work top to assemble the thing on. You would something about as high as a card table (roughly 30 inches) The width could be 2 to 3 feet, and the length might be as long as the boat -- although you could certainly get by with something shorter, or with two short tables that could be spread apart. The added advantage of two short tables is that if you have to work on the inside of the boat you can invert it, and you have a place to get under it.
Some people add electric outlet boxes to their work areas so they have convenient places to plug their tools into. Others add hooks, holes, vises and such for holding tools and clamps, or for holding a strip or panel in place while it is being worked on. This makes a lot of sense, if you have the time to do it.
