In Nick's book, he details a saw horse that is perfect for kayak building. It allows you to support an internal strong back one way and cradle your boat another way. For my S&G hull, I made an 18 foot table from cheap particle board and a few 2x4s that would fit in between the saw horse arms. When I was scarfing, cutitng, smoothing and stitching the plywood, I stuck a short 2x4 across the horse and had the perfect work space at a good height for those things. When I needed the tops of the horse to cradle the boat, I dropped the 'table' part down to the cross brace and I have an ideal storage area. A short piece of 2x4 across the horse and a few spring clamps under the hull keep it from flopping around and I can adjust them to keep the boat level very easily.
The only kicker is, an 18 foot table in a 20 foot garage. I temp screwed it to the back wall for stability and you have to be careful walking around the other side. (How many times has my shirt caught the bow and almost dumped my yak on the floor) Normaly, I take the yak outside and turn it around to work on the other side.
I never use my normal work bench (3x8) except to pile tools up on when I'm too lazy to clean up. Small work gets done on the arm saw table with the arm swung out of the way.
