Hi Matt, I've never heard of that eye condition you're referring to The standard CLC and Pygmy models are both going to fall into the easy category. You'll be surprised how well they take the proper shape... The human eye is capable of incredible things and yours will tell you what you need to know when the time comes. I built two CLC boats with a friend who is legally blind. He can see but just barely. Here's a shot of him stitching one of the hulls.
I would pore over the available literature and paddle one if you can. Build the one you like most not the one you think is easiest. Hey, others have succeeded - no reason why you can't too.
