I think you could strip the deck on just about any S&G hull, although some would be easier than others. Any design that includes or that could include a sheer strip will make it easier. This sheer strip does not need to be as wide as the plans show for a plywood deck, maybe just 1/4"-3/8" by 1". Attach some temporary forms to the sheer strip with 90 degree angle brackets and small screws. Here's a picture of my current project, a Chesapeake 16, for my wife with strips of walnut, pine, sitka spruce, and various cedar species. I'm building this from the book "The New Kayak Shop" and have not had any real problems. This is an easy boat to build. The hull will be primed/painted. CLC offers many designs for the intermediate paddler, and many are fairly high volume kayaks that should handle well in most conditions. My favorite is still the S&G Guillemot, like Myrl's. I also really like the Squeedunk Cormorant or Grebe (for the kids).
