Material: Material for hatch seal.

I am building a wooden sea kayak with a one piece curved deck and am up to the stage of building the deck hatches. What is the best material for making a seal between the deck and the hatch cover ? A local builder who makes Leckey Kayaks under licence uses EVA foam strips about 20 mm by 15 mm. I do not know what density of foam he uses. What type of foam, density of foam and size of foam should I use ? I am told that EVA has a good memory. Any advise would be most welcome.
