I cut them on the bench. I head down to the garage when everyone else is asleep. I do it one piece at a time so I can keep a tight reign on things. It takes forever but that's okay. I'm drawing it out because it will be several years until my next boat

No bead/cove. There is such little curvature here that they aren't required. Each joint adds a magnitude of difficulty. For this application it will be (should be) easier to plane the bevel right on the boat.
