Scott, I think if your area of setting your inlay in was pretty flat them glueing up several pieces would be OK if the design wasn't too detailed. But a wide piece of glued up strips with many detailes would be very hard to get every thing filed and sanded for a good fit without making some fitting mistakes. By going one strip at a time you can get the fitting nearly perfect and if you misfit it is easier to throw that one piece away rather then a big piece that you have spent lots of time on. My deck was curved and so I fit one piece at a time and used thicker wood so I could sand it down to fair with the deck.
