Looking back at some "traditional" boats, the Adirondack Guide Boat was typically build with 1/4" thick cedar. These were work boats intended to carry several passengers, lots of fishing gear, an ample lunch and several containers of hot tea. They would be rowed hard with the risk of occasionally running up on a submerged stump.

By this basis 1/4" cedar should be quite sufficient for a kayak, even if it is going to hit things occasionally. The only thing is it needs some sort of structure to support the skin. On a guide boat this was spruce ribs spaced every 4 or so inches.

It is my opinion that the glass on a stripper largely serves to replace the ribs. And if it weren't for the fact that the glassed inside of the hull thus becomes imperiable to water so you need to seal the outside as well, I think a stripper kayak would not need any glass on the outside at all. From a purely strength stand point the outer layer of glass in largely extraneous.

But because you have created a system that won't let water out, you need to make a system that keeps water from getting in. The addition of the outer layer of glass seals the wood, but at the same time adds some additional strength and abrasion resistance. This comes with a downside. Now you need to worry about point damage where the waterproof integrity of the outer skin is compromised. And the additional stiffness can make the skin somewhat brittle instead of resilient.

Any system you choose will have its own set of deficiencies and it can take some experimentation to see what they all are and in the process you may learn some advantages you hadn't thought of.
