I haven't tried this before, but I would be concerned with the fact that inkjet inks or dyes (depending on the brand) have a tendency to fade, especially when exposed to light. Some photo inkjet printers claim to have stable color out to 25 years of normal indoor light exposure, and the best ($$$) of them can go out to 100 years. I don't expect my kayak to last 100 years, but most cheap (meaning: what most of us have)inkjets will not produce stable color for more than a few years, even less under extreme exposure. To the plus side, the varnish that is coated over the epoxy will provide some protection from UV light.

I have wondered about using an inkjet to produce the image I want and then taking the print to a copy joint and have it copied to tissue or rice paper using a color copier. These work like a laser printer in that some kind of polymer toner (visualize an extremely fine powder made up of microscopic solid-color plastic pellets--solid color is the key here) is thermally bonded to the paper. To my knowledge, color copier prints are considered permanent, in any conditions. If you can find a shop that really knows their machine, they should be able to copy onto virtually any kind of sheet material. As was suggested earlier, try attaching thin rice paper to something more substantial. I have seen rice paper under epoxy and the paper is completely invisible.
