I built a Panache last year. I haven't built anything else so I can't compare level of difficulty, but I did have a few things that seemed "hard" to me. Like Don, I found some of the stations to just seem wrong to me. I just shaped and moved them until I got fair curves. If I build another one I'll modify the cockpit by making it smaller and by flattening out the aft "peak" that loves to poke me in the small of the back when I (try to) roll.
The "Home Grown Boats" video helped me get past my initial intimidation (http://www.homegrownboats.com/). I bought it from Rob Macks with the plans.
I choose the Panache because it's hull was very similar to the commercial boats that I enjoyed paddling. I have not been disapointed!
