I simply varnished the blades of my paddle, which i planed out of a 8' 2x4" cedar plank. It doesn't offer a very tough edge and the tips get dinged a bit on rocks but it does protect the blade from scratches. I left the shaft uncoated to help maintain my grip on the paddle and in hopes of keeping threat of blisters at bay. So far no problems what so ever. You're right about the flex. I have noticed a considerable amount when I really dig to get some speed but as the blades are pretty narrow I don't see being able to snap it in half that way.
