The UV inhibitors in varnish serve two purposes. It protects the varnish, and more importantly, it protects the epoxy and wood beneath it. I would be concerned that an automotive clear coat would not provide the same protection to the epoxy and wood. While it may have UV inhibitors to keep the clear coat clear, that does not mean it needs to protect the paint under it in the same way varnish does.
