If there is a general audience, may I suggest nothing techical. All you want to achieve is to encourage others to try the same (building their kayak).

For the Stitch and Glue, have a couple of short panels ready, then at the demonstration, drill and tie them together, using wire and electrical ties. If you have time, demonstrate a fillet.

For the glassing demonstration, glass over a similar piece to what you did in the previous demonstration.

You would be suprised how long it takes to demonstrate something basic when you are explaining things. Also encourage questions from the audience.
