Don't know if it was the fabric or not, but try a lower heat with some heat proof paper (baking paper) between the iron and canvas. Gives time for the heat to get to the inside of the fabric before the outside melts. Also keep the iron moving at slow but constant rate, travelling forward then back over the seam about 4 inches at a time.
