All of my (oak and ash) ribstock is flatsawn. Flatsawn is more flexible than vertical grain (good for bending) and is what at least one of my written sources recommends for ribs. Harvey Golden mentioned to me that he sometimes buys vertical grain boards of the same thickness as the rib width. This allows you to simply rip the board to produce flatsawn ribs.
No matter what the grain orientation what you really need to avoid is run-out.
