: sheathed onto but not underneath was hard, but flexible.

: If you are going to sheathe 1/8 should be good enough.

I built my Merganser out of 4mm. I was just looking for something cheaper. 4mm is 1/16 thicker and adds quite a bit of stiffness, but is about 45.00 a sheet more. I think i'm going to try the 1/8.
