Rick,

The inner stem should be bevelled so that the whole keel edge is only 1/8" wide, and the part of the inner stem where it's temporarily attached to the end form is the full 3/4" wide. It's not bevelled from one end of the stem form to the other end -- you're taking the stem which right now has a rectangular cross-section and making it trapezoidal. Really, given that the keel edge is only 1/8" wide, the cross-section is almost triangular. I'm at work but later I'll see if I have any good pictures I can email you from home of my Outer Island.
