Toying around with a little problem like this is actually a nicer place to be :D

The way I see it, you have three choices: 1) Keep doing what you're doing - there won't be any real problem with your strips as long as you can safely maintain a consistent cut by applying pressure to the board. 2) Lay the board along a relatively flat surface (like the floor) and mark the high areas (pull a pencil along the floor with a spacer under it). Trim the high spots and then joint/rip as usual. 3) Build a board straightener. I found this one in the Archives http://www.kayakforum.com/cgi-bin/Building/Archive50.pl?review=57158 It looks like Rehd has one too. A board straightener on a table saw would be an extremely long fence or (like the one in Scott's link above) a cradle that rides in the miter gauge slot and carries the board through the saw at a fixed angle.
