With your experience, you could probably build one of the Pygmy Osprey double kits in 70-80 hours. The panels will go together very quickly, there's negligible surface prep (just sanding the seams) and you can answer your own question when it comes to epoxy and fiberglass. If you know how long the actual application of fiberglass took on your strippers, I'd transfer that estimate to the S&G. My first Arctic Tern took about 60 hours, the next one was a Tern 14" and it took only ~40hours.
