I took out two such trees several years ago. The only thing I could add is that I had to haul the pieces to a local portable sawmill because it was cost prohibitive for him to move for such a small job. Nowdays there are a number of relatively smaller bandsaw "mills" around. You might check to see if there are any of those in your area.
I had it cut, and air dried it, exactly as paul describes. I saved everything except the sawdust. I still have some. I've made many beautiful things large and small over the years, there are some pieces in my stripper. I've traded many pieces over the years. The only drawback is needing a dry place to store all my stuff, not to mention a move 8-)) Although one of the claims for black walnut is a certain decay resistance.
One other thing, the walnut husks make the nastiest black dye you've ever seen. Just try and get it off your skin. I guess that's why they call it black walnut 8-))
