I think all of us have done the same research at one time or another. We want our first boat to be the best. I think that any of the three types of boats are fairly easy to build as long as you have the time and patients to do it. I decided on the strip built because of the fact that I could see that I could have more control of my building process. It took me about a year from beginning to end (weekends).
My suggestion is to pick one, find a number of websites where the builder shows the process of that type of building and study the process for a while. Then as you are building the kayak, you can go to those very same sites and figure your way around problems. Even email the builder for suggestions.
