...build your own. I know that with your experience, you'll build one hell of a nice stripper. But I don't feel comfortable with people, even the most experienced strip builders, telling someone else how to design the layout of their strips.

It sounds like you know what you want, just make a sketch, and go for it. I am really sorry if that's not the answer you wanted to hear, but that's my opinion. Maybe you'll get some great ideas from other builder's, even the best builders, but you need to build what you want to build. I know that in my case, I didn't use any visual aid or any other kayak designs, I was just limited to the materials I had on hand. And for me it turned out great, mostly because it's original.
