I don't see any problem building in hatches, just like you sew in the cockpit rim, and make a hatch cover to fit and tie down. As far as a bulkhead, you could put one in, but I don't see how you could do a solid/waterproof one. Before you add the outer skin you could sew a piece of skin around one rib and a matching deck beam to where it would block off the fore or aft area, but unless you actually attach the outer skin to that same rib and deck beam you won't get waterproof. It will, however, hold your gear in the forward / aft sections and out of your way in the cockpit area.
Thought about doing this myself.
Probably doesn't help much, but..... ???

P.S. ( Something to ponder: Building an entire boat sized Sea-Sack(sock) to line the inside of the entire boat. Then sew bulkheads into that and sew it to hatches and cockpit rim on the underside. Then sew the outer skin to the hatches on the outside. This would give you waterproof hatches, cockpit and plenty of air around the boat for floatation. ) ??? ( any takers? )
