I say where there's a will there's a way. I am assuming you are building from a kit and won't have to worry about the initial large sheets of wood and layout which would be a problem in that limited width.
Obviously a way to remove the finished product is a concern as well as sanding debris. I am sure you will have to do some rearranging as you go through the process but I would say it's possible. My work area is not that small but it could be nicer. I definitely would enjoy the building more if I had a decent place to build. As it is I just want to get it done so I can have the boat.

When I finally decided I was going to build a boat I would have done almost anything to get a place to build. I even toyed with asking a former employer if I could use a small patch of warehouse for building my boat. At least in your kitchen you are unaffected by weather and can really make good progress. So maybe the hassle of working in limited space will be offset by a quick building time frame.
