Chris,
Now knowing that your ply is 1/8", I would have to suggest thicker strips. Jim's right, the strips get sanded quite a bit. I've used alot of 1/8" thick strips on models and more than once have sanded it way to thin. 3/16" strips would work fine and could end up 1/8" where it meets the plywood. Once it's all glassed inside and out it will be plenty strong for the deck of a S&G hull. I've read from this board that the strip deck on this type of hybrid doesn't have as much structural importance as in a full stripper. The Chesapeake I built has very short strips and goofy inlays with butt joints all over it and it's held up to the abuse I give it.

Have you considered using a sheerclamp board running along the top of your hull panel in order to attach the deck to the hull, or are you planning on following Vaclav's inside/outside taping method?

Lots to think about, but you're way ahead of me. Enjoy the process and keep us posted. If you're up to it, cut some strips and try them next to your maple as a dry fit, take some pictures for those of us looking forward to starting this design can drool.
