Scott and Ross, you should consider making "water walkers" out of these.
You would need a pair of them, preferably matched in displacement, if not in design. The length and width would be whatever you needed to get a total submerged displacement of your weight plus about 50 pounds. Don't confuse this with a displacement of a boat at its normal waterline, or you'll build much larger than you need.
Strap one on each foot by putting foot harnesses similar to that used on snowshoes or waterskis in the cockpits and go water walking.
Definitely wear a PFD, and you may want to carry a longish paddle.
If you make a saddle which can bridge the pair of cockpits and hold the two boats together, then when you get tired of waterwalking you can tie the two boats together, sit down, and paddle home while sitting on top of the wide and stable platform.
