Two books come to mind. First Nick Shade's book "The Strip Built Sea Kayak" is probably the most comprehensive book available and includes plans/offsets for three different Kayaks. Ted Moores book "Kayakcraft" is also a very good book that includes plans/offsets for four different Kayaks. The Building Manuals from both One Ocean Kayaks and Laughing Loon are good books to have as well but neither of these include plans.
