S&G: Minimizing Weight Gains

No not an ad for flab busters.
After all of the exchanges regarding glass, epoxy and weight I want to rephrase the question.
For a newbie S&G builder what are the most common mistakes in building that will add additional weight to the final boat? Is it too much epoxy, sloppy filleting, end pours that are too large?
Just looking for some cautionary ideas.
