I can't resist... I use a honing guide and wet/dry paper when I have to regrind a bevel. Otherwise I just put my 4000 grit waterstone on a low work surface and hone for a few minutes then flop my stone over to the 8000 grit side and repeat. Then buff on a hard felt wheel for a few seconds. The mother is extremely sharp. I'll check out the blade under a jeweler's loup before and after; that tells me if I need to start with a courser grit, etc.

I'll start to get a slightly rounded bevel eventually because my hands don't hold it at a perfect angle but a honing guide can give you much bigger problems (like Bill mentioned) if the blade isn't in it perfectly straight; that's why I only use one when I have to... but not everyone would agree with that. The stones I use are two Norton dual grit waterstones 220/1000 and 4000/8000. Diamond stones are not required; my waterstones last for years.
