Hi Peter, welcome. Yes it's possible. Remember there are all types of canoes; I've heard of "instant" boats that are put together in a day. Then at the other extreme there are builders who inlay designs of Mother-of-Pearl into their decks... it just depends what you're into. Me? I guess you'd say I'm at the other extreme

The most important thing is to get out on the water. If that means building an instant boat then so be it. Then, if you like the process, you can start to experiment with other projects; that's what I did anyway. Good luck to you.
